Win Son Bakery BEC Scallion Pancake Copycat

Win Son is a Taiwanese American spot in Brooklyn. Their Scallion Pancake sandwich is iconic and one of my fave brunch items in New York. The Trader Joes frozen Taiwanese scallion pancakes make it so easy to recreate at home!

This version has thick cut bacon, american cheese (arguably the best breakfast sandwich cheese), and a generous drizzle of chili crisp oil. It's so quick and easy to put this together. Feel free to use any ingredients you have on hand. Another favorite version I've made has eggs, arugula, cheddar and a drizzle of soy sauce.

Ingredients

Sandwich

2 scallion pancakes

2 eggs

2 slices american cheese

6 slices bacon

2 tsp chili crisp oil

Steps

1) Prepare your bacon. I like to make mine on a sheet pan in a 400 degree oven and cook for 15 mins or until crispy.

2) Heat up your pancakes in a skillet with a little bit of oil.

3) Scramble 2 eggs and top with american cheese until melted.

4) Add your eggs and cheese on top of one pancake and top with bacon.

5) Drizzle chili crisp oil on top.

6) Sandwich with another pancake and cut into quarters. Dip in soy sauce or extra chili crisp oil.
