Trader Joe's Ube Spread Pie

When it comes to delightful and unique treats, Trader Joe's never fails to impress. If you're a fan of unconventional yet utterly delicious desserts, you're in for a treat! This recipe is similar to a Banoffee Pie, with layers of gooey Ube spread, a layer of bananas, and a generous finish of homemade whipped cream. The crust is made with Corn Chex which adds a delicious salty bite to pair with the creamy Ube and whipped cream topping. This recipe is gluten free friendly and takes less than 20 minutes to put together! It's a standout dessert, perfect for entertaining and impressing your guests!
Ingredients
Crust
5 cups Corn Chex
8 TBS butter, melted
3 TBS brown sugar
Topping
8 oz Heavy whipping cream
2 TBS Powdered Sugar
1 tsp Vanilla Extract
Filling
1 Jar Trader Joe's Ube Spread
2 Bananas
Steps
Crust
1) Blend Corn Chex in a blender or food processor until you get fine crumbs
2) Add to a bowl with melted butter and brown sugar
3) Mix until the texture resembles wet sand
4) Spread evenly in pie dish, use the back of a cup to get it packed smoothly
5) Bake at 375 for 12 minutes and let cool before filling
Topping
1) Whip heavy whipping cream together with powdered sugar and vanilla until stiff peaks form
To Assemble
1) Spread jar of Ube spread evenly over crust
2) Add layer of sliced bananas over top
3) Top with the whipped cream
4) Add toasted coconut, sprinkles, more bananas or any other toppings you'd like!
*The pie can be served right away but will be easier and prettier if you let it chill for a couple hours to a day before cutting into it.
